Add some spice to your next family gathering
It is time to get into the autumn spirit! A great way to do so is by making a delicious pumpkin pie that will surely impress family and friends.
Ingredients:
1 medium sugar pumpkin
1 tablespoon vegetable oil
1 recipe pastry for a 9-inch single-crust pie
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 teaspoon salt
4 lightly beaten eggs
1 cup warm honey
1/2 cup milk
1/2 cup heavy whipping cream
Directions:
Step 1: Preheat oven to 325 degrees Fahrenheit. Line a jelly roll pan with lightly oiled foil.
Step 2: Cut the pumpkin in half and remove its seeds, then lightly oil the cut side of the pumpkin. Place cut side facedown on prepared pan.
Step 3: Bake pumpkin for about 45 minutes, or until tender. Let cool on counter until just slightly warm.
Step 4: Increase the temperature of the oven to 400 degrees fahrenheit.
Step 5: Scrape out all of the pumpkin flesh and throw pumpkin skin away. Mash flesh by hand in bowl or blender.
Step 6: Blend together 2 cups of mashed pumpkin flesh, ground ginger, ground cinnamon, and salt in large bowl. Then add eggs, honey, milk, and whipping cream. Pour mixture into the pie shell.
Step 7: Bake for about 50 to 55 minutes. Cool on a wire rack. Enjoy!
